Off Season Mint Cookies

I can’t afford to buy all the Thin Mint cookies we would like for the entire year all in one shot. But I can make something very similar with just 3 ingredients!

…and eat them non-stop all year round.

All you need is 1 bag of dark chocolate candy melts, a few more than 1 long pack of Ritz Crackers and about 1 tsp. of peppermint extract. Yes, I know, in the picture is the vanilla melts. These are all we have in left in the house right now. Gee, I wonder why? 😀

Just melt the chocolates, stir in the peppermint extract, flip a cracker around in the chocolate and cool on waxed paper.

Mini Taco Salads

Last night I made mini taco salads for my gang. It was kinda fun trying to make them look yummy like the restaurants.

I liked doing the tortilla shells this way because timing isn’t an issue. I made all the tortilla bowls ahead of time. Then put in the tortilla a spoonful of beans, seasoned ground beef, lettuce, tomatoes, cheese, sour cream, salsa and a few olives. It was quick to fix, which was a good thing because they were quickly eaten! I was mad at myself for not making spanish rice. But nobody really cared that I didn’t. Too busy crunching and munching.

Here’s how to make the shells…

…one minute in the microwave, take out the glass and let it cool a little.

Tah dah!  😀

PS. I used the tortillas that come uncooked, you have to cook them ahead of time, like in the morning or day before. Then do the micro part just before making the salads.

When Good Cookies Go Bad…

A Christmas doesn’t go by without decorating sugar cookies. This year all three of my (teenage) kids had their sweethearts come over to help. Due to availability, it was three different days of sugar highs.

We started out with gingerbread houses. Things were looking good.

Then 2 gingerbread trains and a truck(we ran out of pieces for the third train). But that was ok, I think…

The truck ran over a snowman?

Then last night after ice skating…

zombie sugar cookies.

It was a lot of fun, all three days of playing with sugar. I hope Santa appreciates all this hard work. At least it all tastes good!
